Chicken and broccoli rice bowl

This was such a quick and easy weeknight meal! And a light one too, which I love in the summer. Or spring. Whatever — it’s hot enough to be glow-inducing during the day already, so it sure feels like summer to me.

For this I made two cups of sushi rice in the rice maker:

And steamed two cups of broccoli, then sprinkled on some lemon juice:

And The Yankee grilled some teriyaki-marinated chicken:

Then we layered all that in bowls and added a bit of soy sauce. A la peanut butter sandwiches! Super easy fake-out take-out, minus the MSG headache.

Cheeseburger pie

We were drowning (drowning I say!) in frozen hamburger patties. And there are only so many burgers a girl can eat (no, really), so I decided to re-purpose some of the beef. And there was my big ol’ cast iron skillet, lying in neglect, not having been used since… um….Β  last night. For pizza. Um, anyway.

This is, obviously, an adaptation of the classic Bisquick recipe. πŸ™‚

You will need:

  • 1 lb. ground beef
  • 1 onion — less or more, depending on the likelihood of smooching someone later; I used about 1/4 of an onion, maybe less
  • 1 cup shredded cheese (4 oz)
  • 1/2 cup AP flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp dry milk
  • 1 tbsp canola oil
  • 1 cup milk
  • 2 eggs
  1. Brown up the meat and onion, preferably in a cast iron skillet, and drain the grease out — I tilt the pan till any grease is on one side, then use a paper towel to blot it out
  2. Spread the meat and onion evenly in the bottom of your skillet (if you’re not using an oven-safe skillet, then spray a pie plate with non-stick spray and spread the meat in there)
  3. Sprinkle meat with cheese
  4. Using a fork, mix together flour, baking powder, salt, sugar, dry milk
  5. Drizzle in canola oil, then work it in with your fork till it looks crumbly
  6. To the flour mix, add milk and eggs and whisk together, then pour over meat/onion/cheese mix — since this was use-what-we’ve-got supper night, you’ll see some shredded mozzarella, some shredded colby jack and a few Kraft singles. It’s what we had! πŸ™‚
  7. Bake pie at 400F for about 25 minutes or until knife inserted in the middle of the pie comes out clean

This was really yummy. Comfort food! If you don’t do it in a cast iron, this could easily be assembled and put in the fridge beforehand, too.

Yankee ribs

Have I mentioned lately how useful it is to have a husband who used to be a butcher? It is so choice. If you have the means, I highly recommend picking one up.

Here’s how The Yankee keeps me from being a size six! Or eight. Never mind.

You will need:

  • Pork ribs — lotsa pork ribs
  • One can pineapple chunks
  • One bottle beer — cheap is fine
  • Dry rub of your choice; Char Broil It is our favorite
  • Your favorite barbecue sauce — Sticky Fingers is our favorite

Not a long list, right? You can do this.

  1. Start with the ribs. On the concave side of them, make a slit down the middle and pull off the membrane. The Yankee says this is non-negotiable
  2. Put them in a shallow baking dish (or two… or five, depending on how big your hungry mob is) and pat on the dry rub on both sides
  3. Scatter the pineapple chunks over the ribs, then pour in the remaining pineapple juice and a bottle of beer, divided evenly if you have more than one pan
  4. Cover tightly with foil and bake at 250F for at about two and a half hours till nice and tender
  5. Slather on the barbecue sauce and get thee to a grill! They’ll only take about 20 minutes total — you’re just sealing on the sauce, not cooking the meat
  6. Serve with cornbread , crackaroni, roasted broccoli, and a roll of paper towels

Crack-a-roni: pioneer macaroni and cheese

Crack-a-roni. This is how The Yankee refers to this dish. My sister, too. And her husband. The Kiddo? He refers to it as he does to any foods that are not yogurt, bread, or Cheerios: “No tank you, mama.” Sigh.

Anyway! The dish! This is from my 1950 Betty Crocker Picture Cookbook. Best $20 I’ve ever spent. I stray very little from this, so here goes:

You will need:

  • 6 Tbsp. butter
  • 6 Tbsp. flour
  • Β½ tsp salt
  • ΒΌ tsp pepper
  • ΒΌ tsp paprika
  • Dash of nutmeg
  • 2 cups milk
  • 8 oz. uncooked macaroni
  • 1/2 pound Velveeta* or 2 cups cheese(s) of your choice

*Even with my general aversion to foods whose ingredients I cannot pronounce, I use Velveeta here. It just totally works in this dish.

Now, just like for the chicken pot pie, we’ll make a white sauce:

  1. Melt the butter over low heat in a heavy saucepan
  2. Quickly whisk in flour, nutmeg, paprika, salt, and pepper, whisking until mixture is smooth & bubbly
  3. Remove from heat; whisk in milk — for a minute it may look like it’s turning into a giant lump, but keep whisking and pouring the milk
  4. Bring to a slow boil and boil for one minute, whisking constantly
  5. Reduce heat to low and cook until thickened — at least ten minutes for best flavor

Easy assembly:

  1. Preheat oven to 350F
  2. While the white sauce is cooking, boil pasta for two minutes less than the shortest time on the box; e.g. if your pasta says to cook for 10-12 minutes, then cook for eight minutes
  3. In a greased baking dish, layer half the pasta, half the white sauce and half the cheese; repeat so you have two layers of each component
  4. Bake at 350 degrees for about 40 minutes or until bubbly. At this point it’s super yummy to stop and stir it together. You can then either serve as-is for super creamy mac and cheese, or put it back in to brown up a bit. Serve hot from baking dish
  5. Join a gym

Let’s talk leftovers

Not just reheat-and-eat night, but let’s talk getting creative with leftovers. What have you come up with? Anything great? This is my new favorite: Italian steak pasta!

Sunday night was steak night. Monday night was spaghetti. So Tuesday night I sliced up the remaining steak, mixed it in with pasta and some Italian dressing (Ken’s, specifically, because I love it) , and topped it all with parmesan cheese. This was SO good!
