These are the recipes and food-related ramblings of me — Erin, a Southern mama who cooks for her husband, The Yankee, and her toddler The Kiddo (who doesn’t like anything).

The Kiddo, actually, could happily survive on Cheerios, yogurt, chicken nuggets and bread, so I’m constantly looking for ways to introduce a little variety into his diet. Variety that he’ll actually eat, of course. That’s the trick.

The Yankee loves meat and lots of it. If you’re looking for vegetarian dishes, you’re probably not going to like it here.

What do I love? Food. Real food. With ingredients I can pronounce.What do I hate? pre-packaged, heavily processed foods chock full of monospsyrlenqidomicone.Yes I made that up. But you get my point. I hate fat-free food that shouldn’t be (like cheese. Fat free cheese? What IS that even?). I love old recipes that don’t call for a can of anything. I love good food that anyone can cook. And of course I love a good dessert. Who doesn’t? :)

I learned to cook when I was a very little girl because my mom found it educational to teach us how to cook. That or she hated cooking… I was never sure. Either way, I knew my way around cast iron when it was still a little too heavy for me to lift it up, and I’m very grateful for that. My daddy taught me that cooking doesn’t have to involve complicated recipes; that experimentation is great.

And why One Particular Kitchen? Well it goes like this: The Yankee and I love the beach.  Our one particular harbor is Orange Beach, Alabama. Our first date was there, we got engaged there, and we were supposed to get married there. Thanks a lot, Ivan. Since we can’t be there all the time, we like to have little reminders of it when we can; hence: Once Particular Kitchen.
